Dinner at the Ritz is a formal occasion, suitable for deal brokering, marriage
proposals and all matters that require impressive surroundings. The city’s only
five-star restaurant is known for service with a quiet flourish amid lavish trimmings like shining silver carts carrying champagne, desserts or
cheese. Every dish created by chef Ron Siegel is a shining,
unique little jewel. He’s known for haute French cuisine with
Japanese touches—most evident in pairing subtle flavors
like shiso and yuzu, and his delicate way with seafood. In the
beautifully crafted nine-course tasting menu, a different meal
is served to every other person at the table. An innovative
recent menu played with the concept of “salt and pepper,”
using flavored salts (vanilla, ginger) and peppers (alepepo,
Szechuan pepper) to set off abalone, foie gras and sorbet,
among other ingredients. Spring for the wine pairing; the
12,000-bottle cellar is nothing short of astonishing.
